Ingredients
  

  • 1 pound boneless, skinless chicken thighs cut into small pieces
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 dash ground black pepper
  • ½ cup ketchup
  • 2 tablespoons soy sauce low-sodium if preferred
  • 2 tablespoons dark brown sugar
  • 1 teaspoon ginger paste
  • 2 cloves garlic crushed
  • 1 teaspoon red pepper flakes adjust to taste

Method
 

  1. Start by cutting the boneless, skinless chicken thighs into small, bite-sized pieces.
  2. In a mixing bowl, combine the chicken pieces with the cornstarch, salt, and black pepper. Toss until evenly coated.
  3. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  4. Place the coated chicken in the air fryer basket in a single layer. Cook for 12-15 minutes, shaking halfway through.
  5. In a small saucepan over medium heat, combine the ketchup, soy sauce, brown sugar, ginger paste, crushed garlic, and red pepper flakes. Stir until the sugar is dissolved.
  6. Once the chicken is cooked, place it in a large mixing bowl. Pour the sauce over the chicken and toss until well coated.
  7. Serve over steamed rice or alongside a fresh vegetable stir-fry.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze the cooked chicken in a freezer-safe bag.
  • Make the sauce ahead of time and store it in the refrigerator for up to a week.
