Ingredients
  

  • 1 Tbsp avocado oil
  • 1 medium yellow onion, diced
  • 8 ounces baby bella mushrooms, chopped
  • 4 cloves garlic, minced
  • 1 lb ground beef
  • 2 tsp dried oregano
  • 2 Tbsp coconut aminos or soy sauce optional
  • 5 ounces baby spinach (about 2 big handfuls)
  • 1/2 tsp sea salt to taste

Method
 

  1. Begin by heating the avocado oil in a large skillet over medium heat. Once hot, add the diced yellow onion. Sauté for about 2-3 minutes until the onion becomes translucent.
  2. Next, add the chopped baby bella mushrooms to the skillet. Stir them in and cook for an additional 4-5 minutes until they’re soft and releasing their moisture. Then, add the minced garlic and cook for another minute, stirring constantly to prevent burning.
  3. Push the mushroom mixture to the side of the skillet and add the ground beef to the center. Break it apart with a spatula and cook for about 5-7 minutes, or until browned and fully cooked. Make sure to mix it with the mushrooms and onions as it cooks.
  4. Once the beef is cooked through, sprinkle in the dried oregano and sea salt. If you're using coconut aminos or soy sauce, add that now as well. Stir everything together until well combined. Finally, fold in the baby spinach and cook for another 1-2 minutes until wilted.
  5. Remove the skillet from the heat and serve the 30-Minute Ground Beef and Mushroom Skillet warm. It’s perfect on its own or served over rice, quinoa, or noodles for a complete meal.

Notes

  • This dish can be frozen for up to three months. Allow it to cool completely before storing in an airtight container.
  • Feel free to swap ground beef for lean ground turkey or chicken for a lighter option.
  • Adding other vegetables like bell peppers or zucchini can enhance the dish's color and nutrients.
