15 Minute Instant Pot/Pressure Cooker Taco Mince

Ingredients
  

  • 1 unit onion finely chopped
  • 1 unit red bell pepper adds a pop of color and sweetness
  • 3 cloves garlic minced
  • 2 large fresh tomatoes diced
  • 1 tablespoon olive oil for sautéing
  • 1.6 lbs ground beef or ground lamb the star protein of the dish
  • 1 teaspoon oregano for flavor
  • 1 teaspoon paprika adds a mild smokiness
  • 1 teaspoon salt to taste
  • 1 teaspoon dried basil for an herby note
  • 1 teaspoon ground cumin for warmth and depth
  • 1 teaspoon onion powder enhances the onion flavor
  • 1 teaspoon garlic powder amplifies the garlic taste
  • 1 teaspoon smoked paprika adds a rich, smoky flavor
  • 1 teaspoon black pepper for a bit of heat
  • Chopped cilantro and salad onion for garnish

Method
 

  1. Start by turning your Instant Pot to the sauté setting. Add the olive oil and let it heat up. Once hot, toss in the chopped onion and red bell pepper. Sauté for about 3 minutes until they start to soften.
  2. Stir in the minced garlic and continue to sauté for another minute until fragrant. Be careful not to let it burn!
  3. Add the ground beef or lamb to the pot. Use the wooden spoon to break it apart and cook until it’s no longer pink, about 5 minutes.
  4. Once the meat is browned, stir in the oregano, paprika, salt, dried basil, ground cumin, onion powder, garlic powder, smoked paprika, and black pepper. Mix everything well to ensure the spices coat the meat evenly. Then, add the diced fresh tomatoes and mix again.
  5. Close the lid of the Instant Pot, ensuring the valve is set to sealing. Set it to cook on high pressure for 5 minutes. Once done, allow for a quick release of the pressure.
  6. When the pressure is released, carefully open the lid. Give your taco mince a good stir, and then serve it hot, garnished with fresh chopped cilantro and salad onion.

Notes

  • Swap ground beef for turkey or chicken for a leaner option.
  • Use canned diced tomatoes if fresh ones aren’t available.
