I’m a bit of a plain Jane.

I prefer my fruit to be completely naked to say the least. No seasonings. No honey. No nothing.

My friends, on the other hand, love eating their fruit with a sprinkle of Mexican chili powder, like the ones from the street stands.

But for me, I need my fruit to be left alone.

Except, a couple weeks back, I decided to go outside my comfort zone to make a savory fruit dish with what I had on hand.

I had a half of a huge watermelon left in the fridge, some goat cheese, fresh mint and balsamic vinegar. And boy, was I in for a treat.

The thickened balsamic reduction melded so well with the refreshing, cold watermelon wedges, blending in with the creamy goat cheese crumbles and vibrant mint leaves.

It’s an incredibly simple “salad” yet such a refresher on a hot summer day.

You can also substitute feta cheese and use watermelon cubes if wedges aren’t your jam. It’s up to you!

 

Recipe

Yield: 4 servings
Prep: 15 minutes
Cook: 5 minutes
Total: 20 minutes

Ingredients

  • ¼ cup balsamic vinegar
  • 1 tablespoon brown sugar, packed
  • 1 small seedless watermelon, cut into wedges
  • 4 ounces crumbled goat cheese
  • ¼ cup mint leaves
  • Instructions

    1. To make the balsamic reduction, add balsamic vinegar and brown sugar to a small saucepan over medium heat. Bring to a slight boil and reduce by half, about 6-8 minutes; set aside and let cool.
    2. Serve watermelon wedges with goat cheese and mint, drizzled with balsamic reduction.
