Did you guys hear about the chicken wing shortage? I saw the headlines for it on the tv at the gym but I thought it was a hoax! I mean, really, a chicken wing shortage before the Super Bowl? And bandits stealing about 65,000 wings?! Wow.

So with that said, I bring you a Super Bowl party food that doesn’t involve any chicken wings. But it does have ground turkey, premium lager, tons of veggies and three kinds of beans. You also can’t forget about the garnishes – cheese, Greek yogurt and fresh avocado slices.

So there you have it – a hearty, Super Bowl party food that ensures your daily serving of vegetables. Who needs chicken wings anyway?

Ingredients

  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 large bell peppers, diced
  • 1 yellow onion, diced
  • 3 carrots, diced
  • 10 ounces mushrooms, thinly sliced
  • 1 ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pound ground turkey
  • 1 ½ cups beer
  • 2 (14.5-ounce) cans diced fire roasted tomatoes
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (15-ounce) can red kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • Instructions

    1. Heat olive oil in a Dutch oven or large pot over medium high heat. Add garlic, bell peppers, onion, carrots, and mushrooms. Cook, stirring frequently, until carrots begin to soften, about 8-10 minutes.
    2. Stir in cumin, chili powder and oregano; season with salt and pepper, to taste.
    3. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks.
    4. Stir in beer and reduce heat to low; simmer, covered, until slightly thickened, about 15 minutes. Stir in tomatoes and beans and simmer until thickened, an additional 15-20 minutes.
    5. Serve immediately.
