With the Super Bowl a couple of days away, I really should be posting game-day appetizers. But in anticipation of all the deep-fried goodies and buffalo chicken wings we’re all about to devour on Sunday, we should squeeze in a salad or two before the madness begins!

Now I’ve posted a lot of salads this year but I haven’t had a quinoa salad just yet. And realizing that I had a Costco-sized bag of quinoa just waiting to be used up, I could help but add it to this salad for a hearty, filling meal.

From the sweet strawberries to the fresh avocado to the crumbled goat cheese, this salad is packed with all sorts of goodies. And with the tangy, sweet balsamic vinaigrette, the flavor combination with the strawberries is absolute perfection!

Recipe

Yield: 2 servings

Ingredients

  • 6 cups baby spinach
  • 2 cup strawberries, halved
  • 1 avocado, halved, seeded, peeled and diced
  • ½ cup cooked quinoa
  • ¼ cup pecan halves
  • ¼ cup crumbled goat cheese
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 2 cloves garlic, pressed
  • 2 teaspoons Imperial Sugar Extra Fine Granulated Sugar, or more, to taste Instructions
  • Instructions

    1. To make the vinaigrette, whisk together olive oil, balsamic vinegar, garlic and sugar in a small bowl; set aside.
    2. To assemble the salad, place spinach in a large bowl; top with strawberries, avocado, quinoa, pecans and goat cheese. Pour dressing on top of the salad and gently toss to combine.
    3. Serve immediately.
