Buttery crisp-tender potatoes with olive oil, garlic, lemon and oregano. Made so easily in the crockpot – less than 5 min prep!
You can never have too many potato recipes. I have one with plenty of cheese, another one deep fried into mashed potato balls and another one pancake style among a few others. No wait, like probably a dozen.
And now I can add these Greek-style potatoes in my carboholics anonymous arsenal.
Smothered in olive oil, melted butter, oregano, freshly squeezed lemon juice and a whole mess of garlic, I will be keeping this entire crockpot full of potatoes for myself.
Why bother with a main dish?

1. Lightly coat the inside of a 6-qt slow cooker with nonstick spray.
2. Place potatoes, olive oil, butter, lemon juice, garlic, oregano and paprika into the slow cooker; season with salt and pepper, to taste. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.*
3. Serve immediately, garnished with lemon zest and parsley, if desired.
