Our St. Patty’s day was rough.
Really rough.
We missed dinner.
And inhaled a massive cheeseboard instead.
With mini donuts.
And some more cheese.
See?
I told you.
It was rough.
To recover, I have this.
Because you know I love a garlic butter sauce.
I mean, I’m drinking this sauce for breakfast.
But don’t worry.
It’s all balanced out with those green beans.
Recipe
Yield: 4 servings
Prep: 15 minutes

Instructions
1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
2. In a small bowl, whisk together butter, brown sugar, lemon juice, garlic, oregano, thyme and rosemary; season with salt and pepper, to taste. Set aside.
3. In a large pot of boiling salted water, cook potatoes until parboiled for 12-15 minutes; drain well.
4. Place potatoes, salmon and green beans in a single layer onto the prepared baking sheet.
5. Drizzle green beans and potatoes with olive oil and sprinkle with garlic; season with salt and pepper, to taste.
6. Spoon the butter mixture over the salmon.
7. Place into oven and cook until the fish flakes easily with a fork, about 16-18 minutes.
8. Serve immediately, garnished with parsley, if desired.
