I hope you all had a wonderful Valentine’s Day. My day involved a 9-hr work day and a hot date at the gym. Except my hot date, aka spin class, got cancelled at the last minute.
Yeah, I sure know how to party it up.
But hey, there’s nothing wrong coming home to these caprese bites either.
The kind folks over at Wasa sent me some of their crispbreads to try out. There are several crispbread varieties, from whole grain to light rye, packed with hearty health ingredients and all-natural grains. They’re low in fat and make the perfect complement to any dish or snack.
I decided to serve these crackers as an appetizer, slathered on with homemade pesto, smoked mozzarella, sliced Roma tomatoes, fresh basil leaves and a balsamic reduction. With the blend of all the fun flavors and textures, your guests won’t even detect that you just served them something healthy. And it looks oh-so-fancy but it really takes just 5-10 minutes to whip up.
So there you have it – a healthy appetizer that’s a cinch to whip up but looks deceptively hard to make. You’ll be sure to impress your guests!

1. To make the balsamic reduction, add balsamic vinegar to a small saucepan over medium heat. Bring to a boil until thick and reduced, about 4-5 minutes.
2. To assemble the bites, generously spread 1 tablespoon pesto on each Wasa Crispbread. Top with 2 slices mozzarella, 2 slices tomatoes and basil leaves. Drizzle with balsamic reduction.
