Actually, because they’re smaller, I think you’re more prone to eat more. Or that’s what I keep telling myself.

Plus, the wonton wrappers are somewhat thinner than tortillas so again, you will definitely consume more here.

Ingredients

  • 24 wonton wrappers
  • 1 16-ounce can refried beans
  • 1 ½ cups mozzarella cheese
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh cilantro leaves
  • Instructions

    1. Place wrappers on a work surface. With a butter knife, spread 1 tablespoon refried beans over half of each wrapper. Top with 1 tablespoon cheese. Fold the dough over the filling to create a half-moon shape; do not seal.
    2. Heat olive oil in a large skillet over medium heat. Add quesadillas in a single layer and cook until the cheese has melted, about 2 minutes per side.
    3. Serve immediately, garnished with cilantro, if desired.
