The classic Thanksgiving sweet potato casserole in individual potatoes with a fluffy marshmallow topping. Makes for such easy serving!

Really.
I’ve already eaten ramen, sushi, tempura, udon and about a million dessert items in between.
This is all in one single day. It’s just not cute.
And upon my arrival, you know I’ll be prepping for Thanksgiving with these adorable little sweet potatoes.
To be fair.
These are super adorable. Yes.
But also dangerous.
Just remember: one potato per serving.
No matter how many additional marshmallows or butter topping you need.

Instructions
1. Preheat oven to 425 degrees F. Line a baking sheet with foil.
2. Place potatoes in a single layer onto the prepared baking sheet. Place into oven and bake for 45-50 minutes, or until soft and caramelizing.
3. In a small bowl, whisk together butter, brown sugar, cinnamon, vanilla and nutmeg.
4. Cut the potatoes down the center lengthwise. Top with butter mixture and marshmallows.
5. Preheat oven to broil. Place potatoes into oven again and broil until the marshmallows just start to brown, about 2-3 minutes.
6. Serve immediately.
