Okay, guys. I admit.

I ate a lot of avocados during Super Bowl Sunday.

Guacamole. Tacos. Toast. Deviled Eggs. Potato Skins. Sandwiches.

You name it.

I thought I OD’d on them.

Yet.

I still had no problem eating these quesadillas.

All. Week. Long.

Overloaded with guacamole, corn, tomatoes and cheese.

If you’re really lazy, just load up on the guac and cheese.

Don’t worry.

No one is judging.

Recipe

Yield: 8 servings
Prep: 20 minutes
Cook: 10 minutes
Total: 30 minutes

Ingredients

  • 8 8-inch flour tortillas
  • 1 cup guacamole, homemade or store-bought
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • ½ cup corn kernels, frozen, canned or roasted
  • Instructions

    1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
    2. Top tortilla with guacamole, tomatoes, cheese and corn, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.
    3. Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes.
    4. Serve immediately.
