Because really, at the end of the day, and literally, at the end of the night, no one wants to do a pile of dirty dishes.

And I’ve said this a million times before. Serve your dinner in the foil packet as is. There’s absolutely no shame in that. I promise.

Why use unsalted butter?

Unsalted butter allows you to add as much salt (or as little) salt in your dish. It allows for more control and consistency.

You can replace unsalted butter with salted butter in a pinch, reducing the amount of salt indicated in the recipe, and adding to taste.

Can I use fresh herbs instead?

Absolutely! But because dried herbs are often more potent/concentrated than fresh herbs, you need less when using dry. The correct ratio is 1 tablespoon fresh herbs to 1 teaspoon dried herbs.

Yield: 4 servings
Prep: 10 minutes
Cook: 15 minutes
Total: 25 minutes

Ingredients

  • ½ cup unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds salmon
  • 2 tablespoons chopped fresh parsley leaves
  • Instructions

    1. Preheat oven to 375 degrees F. Line a baking sheet with foil.
    2. In a small bowl, whisk together butter, brown sugar, lemon juice, garlic, oregano, thyme, rosemary, salt and pepper, to taste.
    3. Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the butter mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
    4. Place into oven and bake until cooked through, about 15-20 minutes.
    5. Serve immediately, garnished with parsley, if desired.
