Prep for the week with these make-ahead sandwiches for those busy mornings! Filling, delicious and microwavable!
It is day 2 here in Copenhagen! I have lost all feelings of my fingers and toes, and the color of my nose is worse than Rudolph.
But still, the architecture here is breathtakingly stunning. And the pastries! They’re pretty stinking amazing too. That’s all I’ve been eating – that and scrambled eggs and salmon.
And today we are headed to Tivoli Gardens. An amusement park right in the center of town with ebelskivers.
And a cup of varm gløgg in hand. It’s basically their version of mulled wine in 30-40 degree weather, which is the best kind of combination, really.
But what I really need with a glass of varm gløgg is this. Mini, adorable ham, egg and cheese croissant sandwiches because they’re just so cute and freezer-friendly.
Recipe

Instructions
1. Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
2. Fill croissants with eggs, ham and cheese to make 8 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
3. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
4. Serve immediately.
