Since I’ve been posting so many sheet pan/one pot dinner recipes, I figured we needed to show some love to breakfast meals.

Because if you really think about it, breakfast for dinner is probably one of the best meals anyway.

Especially when pancakes are involved.

But more specifically.

Blender pancakes. And bacon. And hash browns.

Wait. I digress.

Now when I say “blender pancakes”, I mean that the batter completely comes together in the blender.

Even the blueberries, which gives it a nice natural blue food dye.

Just be sure to have your maple syrup nearby. And that bacon-hash brown situation.

Recipe

Yield: 4 servings
Prep: 10 minutes
Cook: 10 minutes
Total: 20 minutes

Ingredients

  • 2 cups old fashioned oats
  • 1 ½ cups blueberries, divided
  • 1 cup milk
  • ½ cup plain Greek yogurt
  • 2 large eggs
  • 1 banana
  • Zest of 1 lemon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Instructions

    1. Preheat oven to 200 degrees F and a nonstick griddle to 350 degrees F. Lightly coat a griddle or nonstick skillet with nonstick spray.
    2. Combine old fashioned oats, 1 cup blueberries, milk, yogurt, eggs, banana, lemon zest, baking powder, baking soda and salt in blender until smooth.
    3. Stir in remaining 1/2 cup blueberries.
    4. Working in batches, scoop 1/3 cup batter for each pancake and cook until bubbles appear on top and underside is nicely browned, about 2 minutes. Flip and cook pancakes on the other side, about 1-2 minutes longer; keep warm in oven.
    5. Serve immediately.
